This is a special  SINGLE ORIGIN coffee!  We are so fortunate to know the farmer - yes - we've met the farmer - and they have offered us this limited quantity special variety called Pink Bourbon.  This is grown at high elevation (1600-1800m using sustainable practices with living wages paid to the workers.   The coffee comes from the San Gil area of Colombia, is 100% shade grown,  and is hand picked and hand sorted.  This coffee has a cupping score of 87 and the cupping notes are: 

 

FLAVOUR: Sweet and complex flavour. Pleasantly acidity with citrus fruit undertones. Delicate notes of white florals and honey-like sweetness.  Pink Bourbon cups similarly to washed Ethiopians or most Geshas – floral, pink lemonade, honeysuckle, and jasmine flavour notes, with elegant silky texture.

ELEVATION: 1600-1800m

 PROCESS: Honey process and sun dried

Inconsistent roast

Some of the beans looked like a light roast while others looked like medium.

Thanks for your feedback.

The Pink Bourbon is a natural process coffee and was 100% roasted evenly. We profile roast here at Chin Chin and that means we are measuring multiple factors throughout the roast via thermocouples and other points of reference.

All natural process pink bourbons come out the way you experienced. They do not look like regular beans. The same can be said for some Yergacheffe naturals and honey processes as well.
